Tomorrow is finally the long-awaited 6/6, so we opened this bottle the day before to thank the No. 6 yeast! Respect for Kaze no Mori ALPHA6 No. 6 This is the yeast No. 6 that Aburanaga Sake Brewery, which brews Kaze no Mori, acquired from Shinmasa Sake Brewery, where the brewery has been promoted, and the yeast No. 6 that was used in the brewing of Kaze no Mori. This bottle is made from 66% polished Akitsuho sake rice, which is the main rice used in Kaze no Mori. This year's omake dock tag is decorated with a [flax cat], because this year they are using white malted rice just like the flax cat! Its taste is very much to my liking! When you put it in your mouth, it has a fizzy, bubbly taste that is typical of Kaze no Mori, a mineral taste of ultra-hard water, and a sweet flavor that extends from there that reminds you of the No. 6 yeast! This one was so delicious that I almost finished another bottle! Tomorrow is the first day of the Shinsei event on 6/6, so I'm going to drink it with all my might! Rice polishing ratio: 66% (100% Akitsuho from Nara Prefecture) Alcohol content: 14%.
