Maikaze's second stage is probably your first, and it's a Bufuku you've never been familiar with before.
Opening the mouth, it has a light yama-buki color. Faint banana and melon scents are stronger than the aged scents. The body is firm and pungent, the astringency is strong, and the taste is classical. It has a strong alcoholic taste and is a man's sake. But it was still tense.
Three days in? It has become much more rounded. However, the aged aroma is still dominant. The acidity has clearly come to the fore, and you can feel the lingering flavor other than the astringency.

When I started drinking sake, I thought sake would not change over time like wine, but I was wrong. Now I think it is more enjoyable because of the gradual change.
