It has a softness that is typical of Kudokido-Ute, and while it retains its sweetness and mildness, it does not lose its sweetness. It still has a peachy taste, but it also has a melon-like taste. It is not too sweet and seems to go well with various meals.
The latest trend is to have fresh sake with a high acidity, but Kudoi Ue is somehow modern even though it has a low acidity. With 15% alcohol by volume, it also has a light feeling. I would like to pair it with simmered dishes.
