Last night's sake. It is made from 100% Aizan produced in Banshu. The sweetness that is typical of Aizan is a bit reserved, but instead the acidity is strong and the sake is sharp and crisp even when cold. The production is top-notch. You can drink it and not feel any sticking point. Banshu Issen is not available at liquor stores near me, so I don't often have a chance to buy it, but I would love to drink the hi-iru version.
