Limited edition sake for the 300th anniversary of the company's founding. Good - good acidity is delicious! A low-polishing sake with a deep, dark flavor. If you ask me if the sake was good in the old days, I would say that it was not, and even though they call it a traditional sake, I can't say for sure since they probably adopted modern facilities and production methods to some extent. But that's all the more reason to say that the sake is alive and well with the use of the traditional yeast yeast! The flavor is as if the yeast is alive. The slight yogurtiness is good! And it has a slight astringency, a full-bodied and pungent acidity, a complex and very good taste. I think it has been a year of love for Kouzutsuru rather than love for Hyogo sake!
