The first round of drinks was at "Taiping Hai", which was recommended by the restaurant.
It is a junmai ginjo-shu pressed in January, bottled and refrigerated, then matured over the summer and shipped in early autumn!

It means that the sake is matured in smaller containers, such as hitoto bottles (18L) or ichimasu bottles (1.8L), rather than in tanks with a larger surface area exposed to the air (about 500L for the smallest ones).
