The fourth sake was Matsuo's MADARAO, an autumn-aged junmai ginjo sake brewed with 100% Yamae-Nishiki from the foot of Mt. The aroma is mild, but the ginjo aroma seems to have deepened slightly with aging. The mouthfeel is soft and smooth with a calming texture that gives a slight sense of maturity. While showing some complexity from the aging process, the beautiful sweetness and umami spread softly and flow smoothly. It is likely to warm up considerably, but it is also delicious cold. It is not a smooth saké, but it is a saké that can be drunk slowly and easily. It's delicious. ☺️ I want to try drinking it at home.
