Sasamorpha borealis (species of bamboo grass unique to Japan)
Refreshing apple-like aroma. Dry mouthfeel, with a sharpness that complements meals. A little bit of umami. Quite spicy.
This sake brewery is located in Senma, Shiojiri City, just before Kisoji Road.
They are trying to make a new brand of sake through crowdfunding, so I went there to support them and learn more.
I thought the brewery was a modest one, for better or worse, but it has a sharp point of view, offering only unfiltered, unpasteurized sake at a sake tasting event in Matsumoto.
They have the name of Narai-juku on their curtain, but isn't it far away? I wonder if it has an origin.
