Sake received as a souvenir
The rice used is Aizan from Hyogo prefecture with a milling ratio of 65
The yeast used is Shizuoka NEW5.
This was the first time for my favorite Aizan to be brewed with this yeast, so my expectations were high!
It is light for an Aizan sake, with moderate sweetness and acidity, and a slight lychee-like aroma.
It is refreshing and easy to drink!
I thought it was the most refreshing Aizan I've ever had.

Shizuoka NEW5 is a yeast I've never heard of before 😳‼️ I don't know much about yeast to begin with... 😅Silky Aizan sounds delicious 😋.

I was curious about the first yeast too, and when I looked it up, I found that it is a ginjo aroma yeast suitable for light sake.
I think you can enjoy the difference in taste by heating it to room temperature or lukewarm because it is so refreshing when cold 🌸.
