Fukui Pref. Yoshida-gun. Tanabe Sake Brewery Co. Echizenmisaki, tank pressing, junmai, revived rice, Kutouryuu, hi-ire, bottle enclosure, 2023BY. It is very cold today. First, I had only one cup of cold sake. The color is a clear yellow with a gentle and sweet aroma. It flows smoothly on the palate, with a rich umami that spreads gradually and an elegant, fine sweetness. As I expected when I tasted it, it is very well-balanced and to my liking. When the temperature rises a little, lactic acidity can also be felt. The aftertaste is moderately sharp and spicy, with a slight bitterness and pungency lingering in the aftertaste. Next, heated sake. The aroma is the same as that of the cold sake, but milder. The sweetness and umami are not too assertive, but the dignified bitterness and sharp pungency spread gradually, stimulating the tongue. There is a citrusy bitterness in the aftertaste. When lukewarm, the bitterness is still present, but the bitterness is in tune with the acidity, mellowing out the spiciness and making it delicious. I prefer it lukewarm to cold.
