It is getting colder, but we are still going for autumn sake. Kouko cold-aged sake.
It has a sweet and sour taste that is typical of Koshi, with a moderately dry taste that is well controlled. Although it is hi-ire, it still has a subtle gasiness that adds a nice accent.
After drinking it, we noticed that it has a strong umami flavor and is free of any clutter, which is hard to believe given the 80% milled rice ratio. It is a delicious sake that permeates the palate and relieves the fatigue of a week's work.
