This year's Nigorinpik is a select few. Toraya used an unusual technique in that they used an original sake rice developed by Tochigi Prefecture [Yumesasara], which is not considered to be a good rice for sake brewing.
Whether this is the reason or not is unclear, but it is clear and dry with a hint of sweetness? The LaFrance aroma is irresistible.
Toraya's technique is well done!
