The 8th "Enjoying delicious sake with the brewery owner Katsuragi Shuzo "Hyakugakumon" Gosho City, Nara Prefecture Bodai-moto brewing" using groundwater from the Kongo and Katsuragi mountain ranges. The brewery was established in Gosho City, Nara Prefecture, in 1887 as a branch of the original family (now the Kubohon family, founded in the Genroku era (1688-1704), which brewed Sairyu and Namahashimoto Dobu). He encountered "Bizen Omachi," a rice suitable for sake brewing, and was impressed by its depth of flavor, and started brewing sake with it. Hyakugakumon Junmai Daiginjo Yamadanishiki 45 The aroma is quite sweet on the nose, and the mouthfeel is fruity, but the sweetness and acidity come together in the mouth. This is extremely tasty. Hyakurugakumon Ura Omachi 50%, out of the same grade of rice It has a firm umami flavor and a significant bitterness. A little sourness later. Hyakurakumon Bodai-Hashimoto Junmai Dry +10 A little sweetness at first, but less lactic acidity. Overall, it is refreshing, but has a dry aftertaste. Hyakurakumon Urasae +14 The sake is clear and spicy without any sweetness. The brewer had been suffering from the same disease that's been going around for the past 3 years 💦.
