This junmai ginjo uses Mie Prefecture's "MK-1" yeast!
The aroma reminds one of bananas, not too loud and gentle.
The light, refreshing mouthfeel has a sweet, light flavor characteristic of MK-1, a Mie yeast. The pleasant umami of Yamada-Nishiki spreads out. It is unfiltered and hi-ire type, and is very well-balanced.
