I looked at Sugihara Shuzo's website and made a reservation for Shiboritate and was curious about this brand, so I ordered it 🥰.
Even the 4th coaster in the picture came with the service ✨We will have a special honjozo sake from the smallest sake brewery in Japan🍶.
The aroma is sweet but not fruity, with a hint of alcohol. It has a smooth mouthfeel, with a firm sweetness and acidity, and then it finishes with a refreshing kick. It is easy to drink 😋.
On the second day, the taste remains the same. I thought it would also be delicious heated 😍 so I tried changing the temperature 🤔.
Room temperature, the toromi becomes more pronounced. More umami than sweetness and a stronger sharpness ✨.
When heated, the mouthfeel is cleaner, the sweetness is lighter, and the acidity is sharp and tasty.
I just drank one type of Imi and a Honjozo and I got the impression that the sweetness was quite strong 🤔.
