We got it again this year, the UA collaboration version of FOMALHAUT by Abe Shuzo.
To be honest, I think it might be my favorite of all the kijoshu. I like it as much as Yonotori.
Since the previous year's FOMALHAUT is used for brewing, I get the impression that the flavor is getting richer and richer, yet the mouthfeel is still clean, so I don't get tired of drinking it.
I have an image of kijoshu as a rich and sweet sake, but there are some sake that are called kijoshu but are light, so there are not that many sake that I feel are truly kijoshu. Of course, there are some sakes that have a stronger flavor than other sakes made by the same brewery, but I don't think there are that many sakes that are truly kijo-zake.
In that sense, Yonotori and this FOMALHAUT are both properly kijo-zake, with a delicious sweetness and a beautiful mouthfeel, and they are my favorite kijo-zake.
I will buy again next year.
