Yes. It is the season for new sake. I don't often buy sake, but it occurred to me that I might be able to find a new bottle of Tasake at that sake shop, so I went to the store on Labor Thanksgiving Day. There it was, the last bottle. I bought it without hesitation. The shopkeeper told me that the sake brewing process has become 10 times more time-consuming this year. He said that the koji used to be rolled five centimeters thick and sprinkled with yeast once, but now it is one centimeter thick and the front and back are turned so that there is no unevenness. And yet the price remained the same. It is very refreshing, without the thick texture characteristic of nama-shu, and goes down very easily. I almost opened a bottle😅.
