When I asked the owner about the label, which I had never seen before, he told me that it was made from a newly developed rice called "Niji no Kirameki," which is resistant to the recent summer heat.
The moment I put it in my mouth, I felt a slight carbonation and juiciness. The label says it is refreshingly dry, but I personally thought it was the kind of sake I like with umami flavor.
