<Fresh, robust flavor and sweet bitterness.
The color is slightly white. It is almost transparent. It is certainly paler than light nigori, and the name "kasumizake" is apt.
The aroma has a strong rice flavor and a gentle sugar sweetness. There is also a hint of fresh bamboo grass bitterness and lactic acidity in the back.
In the mouth, there is a vague sense of umami from the start. The umami spreads further with the sweetness, and a nigori-ish bitterness is also present. It is fresh, yet powerful, and has a complex bitterness, yet it is beautiful. Yum~!
This lingering bitterness should be served with a meal.
If I were to use a Ghibli analogy, it would be Mr. Caproni from "The Wind Rises. He is the Italian airplane engineer who appears in Jiro's dream. He is both Jiro's admirer and the devil Mephistopheles who tempts him. He is a man with the strength and freshness to follow his dreams. On the other hand, he also has the bitterness that war and airplanes are inseparable.
