Kaiharu" is the representative brand of Wakabayashi Shuzo, a brewery located in Ontsu-cho, Ota City, Shimane Prefecture. The name "Kaiharu" comes from a passage read by the Chinese poet Tou Enmei, who loved sake. This sake is characterized by its strong, robust flavor with a clean, easy-to-drink aftertaste. The brewery uses Kaminomai, Yamada-Nishiki, and other rice varieties suitable for sake brewing, as well as Onsunzu's Iwashimizu water, and has a history of over 150 years since its establishment in 1869. In recent years, the brewery has been aiming to adapt its sake brewing to the times by hiring young toji (master brewers) and expanding its lineup to include products for young people and overseas customers. Kaiharu Special Junmai" is a junmai sake made from "Sakonishiki," a local sake rice from Shimane Prefecture. It is recommended as a sake to be enjoyed with food, as it has a strong umami flavor and enhances the taste of food.
