One of the bottles ordered from Okuda, a sake boutique in Wajima City.
It is delicious, bitter, refreshing, and light.
It is different in that it is made with the original ultra-hard water from the Aburacho Sake Brewery and Kanazawa yeast, but it has more of the Kaze no Mori character than the sake made with the original recipe.
So why not just go with Kaze no Mori, which is only half the price? But that's not the point.
But that's the main purpose of brewing this sake, so we will enjoy it while hoping for the recovery of sake breweries in the Noto Peninsula.
