Sake and Otsumami Chuin Shinmachi Store's November SAKE club "Tasting Aged Nama Sake".
The second sake from the 2021BY series, aged for about two years.
It is "Jyushiyo Kakushin Honmaru Nama Sake.
This is the first time I learned that there is a seasonal "Kakushin" Honmaru (raw sake) in the Hiden Tamagase (al-soze) series.
It is a special honjozo sake.
The appearance is clear crystal.
The aroma is softly woody and mature, with the usual fruity aroma typical of Jyushiyo Honmaru wafting from the back.
I don't find it offensive, but I wonder if this kind of aroma used to be classified as off-flavor and cut off as raw aged aroma 🤔.
The mouthfeel has a trompe l'oeil, with a juicy, fruity sweet flavor to a huffy, snappy feeling that is unique to Aruzoe, and the whole experience is rounded.
This one also has a slight bitter spice feeling in the aftertaste 🤔.
The usual juicy fruity taste is muted here as well, but the fullness and roundness of the flavor due to aging has appeared and it is very tasty 😊.
