This was also blind tasted.
The aroma is white peachy and complex, like a fragrant yeast, but the volume is not as loud as it should be. The taste is full, sweet, and very much like shaved Yamadanishiki, but there is also a sense of sake lees, giving the impression that the rice polishing is appropriate. The fact that it is alkalo-sweetened is a bit surprising.
Pairing: Suitable for light summer dishes such as chilled tofu, white meat fish carpaccio, and deep-fried soaked summer vegetables.
