Omachi Shiboritate has been on sale since last year. Last year we drank the raw type, so this year we bought the hi-ire version. It is difficult to compare the two over a year, so I drank it while looking at my notes from last year. The taste changes little after drinking, with a stable, sharp, nutty acidity and sweetness. I drank it with cheese, but it seems to go well with more strongly flavored dishes.
