This sake was sold directly from the brewery on a limited basis by a liquor store.
While I was removing the guard, the cork flew out with a bang! I was lucky it didn't hit me. I was surprised at the vigor of this sake even though it was fire-aged.
When I poured it out, it was a big splash.
The aroma is sour, rummy, and apple-like.
When you drink it, it has dark apple soda, apple with lots of honey, and ripe muscat. There is a sweetness that hits the throat like a honey apple cider, but there is a firm acidity at the end, and combined with the fizz, it makes for a refreshing overall experience.
It is 5%, so you can gobble it up and enjoy it.
I wonder if the previously ordered activated sake might have a little more acidity.
The carbonation has decreased as the bottle has been open for a few days. However, it has a rich cider taste and is delicious. Although it is 35% polished, it is not a beautiful or clear sake, but rather a sake with a strong flavor and a strong taste.
I enjoyed it as an aperitif and dessert sake.
The only flaw is that it runs out quickly...
