On the first day of a three-day weekend, grilled sanma (mackerel) made an appearance. Hiyaoroshi" was the perfect accompaniment.
It is hiyaoroshi "Kizuna" from Matsuura Sake Brewery in Kaga Yamashiro Onsen.
It is brewed with Hachitan-Nishiki from Hiroshima.
When you take a sip, a gorgeous aroma spreads in your mouth, followed by the umami and sweetness of the rice, and then the acidity and moderate bitterness. The pairing with saury with a hearty belly is simply "delicious". It also rinses the mouth well.
In this age of aromatic and gorgeous drinks, this kind of sake is also important.
