Slightly gassy
Not as sweet as other Kinjaku, and the sweetness is quite moderate.
The lactic acidity from the sake's yeast yeast is not so strong, but you can feel the presence of the acidity.
Intertwined with the apple aroma, it is like biting into an apple in the mouth🥹.
It is thick and drinkable.
The umami is also strong and very elegant.
The bitterness comes out at the end and the aftertaste is clean.
The bitterness is distinctive, with a hint of chocolate.
For me personally, the aroma and flavor are best when the temperature is low 😋.
After drinking only 3 cups, I was too lazy to leave it in the fridge for a while!
After a few days, the sweetness increased and the aroma changed
When I first opened the bottle, the aroma was 9 apple to 1 lactic acid.
Now the lactic acid is stronger, 7 apple, 3 lactic acid, plus a little bit of alu
Slightly gassy feeling is still present.
The aftertaste is exceptional, mature.
Maybe it's because of the chocolatey bitterness

This is the first time I've had Hiden Oyakashiro.
I was surprised that the flavor changes quite noticeably when it is left to sit.
