What is Enyu Junmai? I have never heard the word "Enryu" before, but when I looked it up, I found that it means something like "to be completely united while maintaining each individuality. I did not drink it while thinking about how happy the world would be if such a thing were possible, but it was delicious enough to make me happy. It is very mild, but it has umami, sweetness, sourness, and bitterness. It really has the feeling of being a "yen-yu" (a Japanese word that means "round" or "melt"). It has the power of words, but it also has the power of sake.
