Jouki Junmai Unfiltered Namazume Genshu BY2019 Ingredients: rice, rice malt Polishing ratio: 55 Alcohol content: 17.5 Brewing water: Natural spring water, commonly known as "Koganei Ido". Toji Name: Takeki Ishihara I'm not a big fan of aged sake, but this is not from Tokyo Revengers, but from Takemichis of Oroku. I drink it cold. The aroma is not gorgeous right out of the fridge, but it has a sweet rice aroma that spreads. Polished to ginjo level, it has a nice aroma. The mouthfeel is smooth and easy to drink, but the moment it is swallowed, it has a strong acidity and a slightly sour taste, with a sharp aftertaste. After the sharp taste, there is a tingling sensation on the tip of the tongue and more umami. The umami is mellow and mature. The lingering bitterness and sake-like sensation is a little heavy and dry. Total classic type of flavor. Still, in a good sense, there is little sense of maturity, and even though it is dry, it is easy to drink. A sake to be drunk slowly and deeply. On the third day after opening the bottle, the aroma changes to caramel, and the sourness has decreased considerably, allowing the umami and bitterness to be felt well. The sake feeling remains the same and it is dry.
