It has been almost a year since we opened the bottle, as it was too precious to open. I opened the bottle because I thought it would be a good idea to open it.
Perhaps because it had been sitting for a year, the corners had been removed and it had become a very drinkable sake. It has a very soft taste on the palate and the umami of the rice is very strong, and to be honest, I am glad that I let it sit.
It is a sake that is hard to find, but if you have the chance to drink it again, it would be good to let it sit for a while as well.
I would like to have it again.
