Just by opening the lid, a very elegant and gorgeous aroma spreads out. The aroma is just amazing. It's fruity and fruity, with a hint of rice.
The mouthfeel is soft, but you can also sense a chattering sensation. The flavor of the rice comes through strongly, and after a hint of sweetness, it has a great cutting edge.
It is not a conventional Daiginjo sake despite the 40% rice polishing ratio, but a well-honed umami remains firmly in the middle, with a good balance of astringency and acidity.
It was a wonderful sake, perhaps because of the characteristic taste of the short-stemmed Watifune. It was delicious!
