Low-alcohol summer sake among low-alcohol Koyogiku.
The sourness of the fermentation is so strong that I thought I had mistaken it for Gekko, with lactic and acetic acid and a bit of cheese-like milky aroma.
I'm sure it's not a shipping or storage problem, because it came with the other day's light cherry blossoms.
The taste is mildly acidic, with a good sweetness and umami, and a refreshing rice-like sweet and sour taste.
The taste is not fruity, but rather classic, with a clean aftertaste and a freshness typical of summer sake.
It's a very different direction from what I imagined, but I think it's a good and unique sake, but it's just not the taste I'm looking for in Koyogiku.
