This Junmai Daiginjo is made from Yamadanishiki polished to 35% and fermented in Kyokai No. 9 at low temperature for a long time! A tax return gift to Sado City. I've been donating every year to support the gold mine on Sado Island, a World Cultural Heritage site, and I guess my activities have paid off. (I just want to drink good sake)
