Next is Kudokibe.
It is Dewa Sanzan 33 Nama Sake.
Dewa Tsannin is the pride of Yamagata Prefecture.
Incidentally, Junmai Ginjo-shu made from 100% Dewa Sanzu rice polished to 55% or less and brewed with Yamagata yeast and Yamagata's original koji mold, Olise Yamagata, is certified as "DEWA33".
This Kudokibe is not DEWA33 certified, but it is a very luxurious junmai daiginjo with a milling ratio of 33%.
The appearance is pale yellow crystal.
Sweet ginjo aroma of pear, melon, and banana.
The taste has a sweet, clean first touch.
Gentle and beautiful acidity.
It flows smoothly and finishes with a slight bitterness in the sweetness and umami with a sense of rice.
The lingering aftertaste is long and complex.
There are occasional lapses of acidity.
Delicious. ☺️
