10 🏆2023 private sake Minty, zesty aroma. It is like a Junmai sake, but without the old smell and refreshing. Room temperature. There is just a refreshing taste, ricey and minty. It is hard to believe that it is a low-polishing sake. At 40°C, the crispness is the same, but the flavor of the rice comes out and it becomes mellow. The minty freshness is reduced and the rice flavor becomes stronger. At 45℃, the spiciness becomes stronger, so personally, I prefer 40℃ the best. You can also let it cool down after serving. On the second day (stored at room temperature), the flavor is more on board and it becomes mellower even at the same 40°C. This change is also a bit surprising. It is not bad at all as an orthodox Junmai-shu for eating, as it has sweetness and umami even when served cold, and it cuts cleanly. It is a Junmai-shu that seems to be a Junmai-shu, but it is very refreshing. It is characterized by its Kamerei-ness, or cleanliness, and its light aging after the second day is also good. It is a candidate for a regular sake, but it is not easy to get because there are only a few stores that carry it here and the four-pack is only released once a year 😅.
