A nearby station was selling Niigata's best sake, so I was allowed to sample and choose one.
It was labeled as having a sake degree of -40.0, and the clerk introduced it to me by saying, "It's like wine.
When we poured it into a well-chilled glass and enjoyed it, it was indeed like a sweet white wine, but with a gentle rice-derived mouthfeel.
It also has a sourness like calpis or yogurt, and because it is so sweet, one should be careful not to drink too much.
It paired perfectly with the truffle cookies that I had carefully stored in the refrigerator to accompany the wine.
It seems to be good to drink as an aperitif.
