The taste is rich and mellow. The taste is not that heavy and calm. The sharpness is good.
I saw on the Internet that the concept of Kenryo Shuzo is to create a flavor that never changes. They do not follow the fruity taste that is popular in the sake world today, but rather, they are trying to produce the same taste that they have been making for a long time.
It is a great food sake, especially with strong flavored dishes.
