At the restaurant attached to the brewery
Reborn was my favorite of the day among all the sakes we compared.
The aroma was very typical of sake, and the mouthfeel was light and fruity.
The taste has a strong acidity and a lingering umami flavor.
Overall, a well balanced sake.
It went well with clam soba with soy sauce!
What else we drank
Honjozo nigori raw sake, Junmai Ginjo, and Namahashiroshi Junmai.
All were delicious!
