Hachiganishiki 40 has no orikara, so this will be the first comparison in The Premium series.
As with the Miyamanishiki 48, the aroma is sweet and sour, like pineapple, and is very pleasant as soon as you open the lid!
The taste is less sweet than the orikarami, but the acidity is more robust, and it is sweet and sour just like a pineapple!
The umami is not as rich as the 48, but it is not lacking in fullness.
The taste is very clean from start to finish, with a delicate, even transparent taste.
The Premium is relatively light and is like a royal road of sake, while the previous Huayouyu is a thick, sweet sake of a different kind that easily bears a strong taste.
It is a sake that is best served with sashimi and steamed food, or on its own.
