It has been three months since I started using Sake-no-Wa, and I have been looking for a new sake to drink.
Today I chose this sake, which I am used to drinking. It is the ultimate food sake for me, with a light acidity, good mouthfeel, and a nice sharpness.
Following April, I received many replenishments of Tomoizumi from a lady in Kawatabi during the Bon Festival.
According to the flier, the sake rice is brewed with Kura-no-Hana by Toshihiko Chubachi of Kawatabi, Naruko, and the brewing water is from the underground water of Mount Hanabuchiyama in Naruko. The refreshing acidity with an emphasis on the umami and sharpness of the rice invites a good appetite.
