This is a Junmai Ginjo from Shibarihizuru, but it is a different strain from the standard Jun.
Is it because they use Yamadanishiki?
Compared to the traditional Junmai Ginjo-shu Jun, it has a fresher and juicier flavor.
It is a modern sake that shows a new challenge from a brewery that used to brew so-called "light and dry" type sake 🤩.
