Ryujinmaru after a long time
I didn't have a chance to drink it because it's a bottle, so it's been aged for 3 years now.
It is a 50% Yamada-Nishiki polished unfiltered unpasteurized sake.
The alcohol content is 18%, which is higher than the trend.
The aroma is mild ginjo with a hint of rice and grains.
It seems to be a classic sake, but it is more beautiful than ordinary sake.
Maybe it is because it is made by hanging it in a bag.
The taste is full, strong, sweet and umami.
And I don't know if it's because it's unfiltered raw or because it's aged, but it's very drinkable and delicious, accented with a rich cocoa and malty flavor.
What is particularly impressive is that it combines a rich taste with a light mouthfeel.
You don't notice the 18% alcohol content, and the aftertaste is refreshing and very easy to drink!
I don't often drink classic type sake, but I think it's a very good and well-made sake.
