Unfiltered unpasteurized sake with plenty of sweetness.
It has a certain old-fashioned feel to it, and although it does not have the fizziness, sharpness, or modernity that is so popular, it is a deeply flavored sake.

Thanks to Sake Sho Yamada, I have had the opportunity to learn about sake from the Chugoku region and Hiroshima Prefecture, which I had not been able to encounter before.
