Tochigi summer sake series, part 2. This brewery is owned by Zenbe Tsuji, but the Tsujikaze brand is probably the only summer sake. It is a pale blue bottle, but it is shipped in May, so it is okay. The aroma is very faintly melon-like. When you drink it, it has a vanilla-like nuance and the umami of rice, and although it expands a little, it is soon gradually lifted by bitterness or pungency. There is not much difference in taste, but it is a sake that can be drunk casually in summer, but it has umami and is not thin, and one can feel the technical skill of the brewer. It is raw but stable as if it were fire-roasted. It can be used as a mid-meal drink, in simmered dishes, stir-fried dishes, and salads, and it is especially good with richly flavored simmered dishes, where the umami flavor is present but is also washed out.

Hi Kab 😃 Tochigi summer sake series! I will refer to it 🤗 I've had Tsuji Zenbei's sake before, but Tsuji style! I'll try it next time 😊.

Thank you for your comment, Jay & Nobby: 🙇‍♂️ Tochigi has a lot of sake with a strong umami flavor and a high degree of perfection 😁. Tsuji Zenbei Shoten seems to have won 9 consecutive gold medals this year, so you can certainly sense their technical skill.
