The last day of the three days of the month I finished up this sake that I had been chipping away at as a regular drink since the end of last year. At the end of the year, I was a reactionary buyer of new and fresh sake in Nara, or this slow-made sake, brewed in 2020 and manufactured in 2022, was always on hand. It was a slow brewed sake with a lot of depth. We enjoyed it at room temperature and lukewarm. The brewer, Morikawa Shuzo, is located in Kure. I am hoping to visit the Yamato Museum soon, which I did not have the chance to do when I visited Kure in the past. Such is the case with Kure's sake, Hakko. I remember drinking it with a glass of wine at a small Italian restaurant in Osaka that had a few seats at the counter. I have very happy memories of eating very reasonably priced food and talking with the young and friendly master while drinking "Hakko". After Corona, the master became ill and now that the menu has changed a bit, we can no longer have dinner time while drinking Hakuhong. However, he continues to operate the restaurant, so I believe that one day Hakuhong will make a comeback. At the restaurant, I believe it was Junmai Daiginjo or Ginjo, so I thought that would be at the restaurant, and at home, Junmai! With that in mind...
