The only winery making muddy sake in Yamanashi Prefecture Agricultural Production Corporation Suzuran Sake Brewing Industry Co. The name of the brewery did not appear in the new registration. The brewery is in the process of making sake. We couldn't visit the brewery at this time of the year because they were in the process of making sake. I bought it at "Sato no Eki Ichinomiya". The open-air bath with a view of Mt. Yatsugatake was great! And a traditional set meal at a traditional set restaurant! The winery uses only Koshihikari rice produced by JA Nashikita in Yamanashi Prefecture and carefully brews it from rice malt to produce the finest muddy sake! Nigorozake, also known as "doburoku Made from 100% Koshihikari rice with a milling ratio of 70% and brewed using the modern brewing method for Sake. The sweet taste is created by using soze, chu, tome, and shidan (four steps). The fermentation period is 20 days, and the sweet taste and alcohol content are full of Yamanashi koshihikari rice, yeast, and enzymes, and it is a cloudy sake with a rich flavor without being strained.
