Hiyoroshi purchased last fall. Hoping that it has matured just a little.
At the entrance, there was a sweet aroma of rice, slightly reminiscent of cotton candy. In the mouth, the sweetness of the rice is slightly withdrawn, and a slightly thicker umami flavor comes in with excellent sharpness. While the sharpness comes to the fore, the taste is not too dry. Delicious.
The taste of the rice, which is extremely sharp but still has the umami and thickness of the rice, is a must for those who like so-called "dry" sake. It is a taste that I don't usually drink, and it is delicious.
