Not flashy, but a little dry, sharp and full-bodied. Slowly. Take your time. Goes great with grilled salmon from Murakami, Niigata.
A week later, serve with pork koji. Warmed up at ♨️ 55 degrees, it is still hard. 65 degrees will open it up. It is easy to drink and the umami spreads. The miscellaneous taste disappears, and the rice flavor is enhanced.
