This Akabu is made from Yamagata's sake rice, Sake Mirai.
Sake Mirai sake rice can only be used by sake breweries approved by the Takagi Sake Brewery in Yamagata. It seems that Akabu Sake Brewery has been able to obtain it over the past eight years.
When I took a sip of the sake, I found it to be a smooth and refreshing drink. Although it has a dry taste, the umami flavor spreads well in the mouth, and the fruity taste unique to Akabu can also be felt.
The taste was completely different from the Akabu we usually drink.
