It's about to get cold, so I'll have this.
We brought in the Nirvana tortoise that we got as a souvenir the night before.
With the permission of the restaurant, we brought it in and served it as a free-flowing sake!
The proprietress, regular customers and us enjoyed the rare sake that is hard to find!
Thank you, Sake-no-wa Tomo!
The taste is a low-polished sake with a light acidity, but it's a work of art!
I will pair it with seared tuna carpaccio!
A dish with a little sesame oil!
Delicious! Goes well with sake!
extensive knowledge of sake
Rice used: Sake-komachi
Rice polishing ratio: 88
Alcohol content: 12~13 degrees
Brewing vessel: Wooden vat
Bottle used: Rokka Tsuki Nagatsutsu Sake Ire
In order to revive the essence of sake from the Edo period, this junmai sake is brewed with a low rice polishing ratio of around 90% for both koji and kake rice. Normally, brewing sake with rice that has been almost completely unpolished is extremely difficult, as it tends to produce a cloying taste. This sake is made with the best of the brewery's ginjo-making techniques, while at the same time expressing the elegance of a modern ginjo. From the 2019 harvest, the rice will be brewed in wooden vats, embodying a more traditional form.
